The Coffee Story
The SourceClassic Yirgacheffe Territory
Yirgacheffe earned separate designation despite being geographically part of Sidama because cups from this narrow plateau taste distinctly different. The Gedeo Zone highlands where this coffee grows have been the benchmark for beauty and complexity in arabica for decades, Grade 1 Washed Yirgacheffe commands premium pricing for good reason.
Volcanic soil rich in minerals, abundant springs that give the region its name ("Land of Many Springs"), and elevations from 1,800 to 2,100 meters create ideal conditions. Cool temperatures extend cherry maturation, building the density and aromatic complexity that meticulous processing later reveals.
The CraftWashed: The Yirgacheffe Way
Washed processing reveals Yirgacheffe at its clearest. Cherries depulped within hours of harvest, beans fermented in clean water for 24 to 72 hours to remove all mucilage, then washed thoroughly and spread across raised beds to dry. This creates the sparkling clarity and tea-like body the region is famous for.
What emerges is coffee stripped to essential character, you taste the volcanic minerals, the high-altitude florals, the heirloom genetics. No fruit fermentation to mask origin, no processing variables to obscure terroir. Just Yirgacheffe, transparent and elegant.
The CupTextbook Yirgacheffe
Jasmine aromatics rise before the first sip, floral complexity that announces this coffee's origin immediately. Lemon brightness opens the palate, providing acidic lift without sharp aggression. Black tea tannins follow, adding structure and that characteristic Earl Grey quality. Honey sweetness emerges as the cup cools, balancing the acidity. The light body floats, letting delicate flavors shine without crowding. This is what made Yirgacheffe legendary.
